FIELD: kitchen equipment for cutting and producing of ornamental articles from vegetables and fruits used for decoration of table and dishes.
SUBSTANCE: shaped knife for carving has narrow curved working portion equipped with cutting edge and fixed by means of shank in holder provided with hand stop formed on its lower face and thickened part formed on lateral faces in its front portion. Working member has convex arcuate outer end and stepped inner end consisting of straight part and rounded stepped member provided at its base. Cutting edge is formed on straight portion of inner end. Angle λ between outer arcuate end and cutting edge is selected within the range of 9-10 deg. Ratio of length l of cutting edge to width k of working member at site where cutting edge adjoins stepped member is selected within the range of l/k=5.6-5.8. Holder has trapezium-shaped section with rounded ribs, lateral faces slightly widening toward free end, and lower arcuate surface. Front end and free rear end are made beveled and rounded toward lower face. Thickened portion provided on holder is made triangular on its lateral faces and has trapezium-shaped section slightly widening with its lateral faces toward free end.
EFFECT: wider operational capabilities, simplified operations for decorative cutting of vegetables and fruits, convenient and reliable usage, reduced labor intensity, increased speed and improved quality of cutting vegetables and fruits.
