FIELD: canned food industry.
SUBSTANCE: canned composition based on at least one odoriferous grass contains at least one substance adapted for setting water activity of composition to 0.90 or less, and at least one substance increasing pH value of composition as compared to pH value of odoriferous glass (grasses) after adding of substance for setting water activity to at least 1.0 unit. Composition additionally contains at least one antioxidant and/or is packaged under conditions protecting from oxygen. Method for preparing of canned composition based on at least one odoriferous grass involves using odoriferous grass (grasses) having moisture content of at least 30 wt%; mixing odoriferous grass (grasses) after or during grinding procedure with preserving composition.
EFFECT: improved quality and simplified method for preparing of canned composition based on odoriferous grass.
