FIELD: food industry, canned food industry.
SUBSTANCE: it is necessary to prepare haricot beans, other components and medium followed packing into consumer's packages, sealing and sterilization. Prepared beans should be soaked and blanched till 200%-swelling to be then washed and mixed with other components. The obtained dense mass should be delivered for packaging. The medium that contains 2.5% salt and 7.5% sugar should be boiled for about 2-3 min, filtered and delivered for packaging at medium temperature being 90°C, not less. The suggested canned food additionally contains powdered coriander and walnut kernel at a certain ratio of the components taken. The innovation enables to decrease energy expenses at improved dietary characteristics and palatability of the suggested canned food.
EFFECT: higher efficiency of manufacturing.
