SUBSTANCE: canola protein isolate at protein content being, at least, about 90 weight (N×6.25)should be applied as a substitute of, at least, one component that provides functional properties in a food composition. Canola protein isolate is being the mixture of canola protein isolate in the form of amorphous protein mass obtained due to depositing solid phase of protein micelles dispersion and mixing amorphous mass with concentrated supernatant from the stage of precipitation and has got a protein profile being distinct against protein profile of canola protein isolate obtained due to conventional technique. The suggested canola protein isolate is of high functional properties.
EFFECT: higher efficiency.
