SUBSTANCE: claimed protein isolate contains at least 90 mass % (N x 6.25) preferably 100 mass %(N x 6.25) of protein and has the next protein profile: 2S protein: from 60 to 95 mass %; 7S protein from 5 to 40 mass %, 12S protein from 0 to 5 mass %. Canola protein isolate represents dried supernatant liquor from step of deposition solid phase from canola protein miscell dispersion. Said isolate is useful in substitution of at least one component of food composition.

EFFECT: foodstuffs of improved quality.
