FIELD: food industry.
SUBSTANCE: invention relates to food industry in particular to confectionary production and can be used for production of confectioner's goods with chocolate glaze and filling. Confection contains chocolate glaze with two joined sides of volumetric geometric figure with embossing pattern on the surface. Filling is put inside of the cover, the filling is prepared of quantity of the components indicated in the recipe and includes sugar, syrup, milk component, flavor and flavor component. The halves of chocolate cover is made of dark chocolate glaze, notably that white chocolate glaze is spread over each halves in the place of embossing pattern. Quantity of white and dark glaze is selected in the ratio of 1-1.2:9-10.8. The filling is prepared from the components indicated in the recipe, it additionally contains vegetable fat, cocoa, lecithin, and skimmed milk powder as a milk component, cocoa-product as a flavor, with corresponded ratio of the filling components in wt %.
EFFECT: enhancement of confection form stability and simplification of embossing pattern formation.
