FIELD: food production technology.
SUBSTANCE: tinned food is produced by cutting, blanching and chopping onions, cutting and chopping lamb meat. Cilantro is cut and frozen. In oxygen-free atmosphere, lamb meat, onions, part of cilantro, salt, black pepper and laurel leaf are mixed to produce mincemeat. Wheat flour, hen's eggs, potable water and salt are mixed to produce dough, which is proved, handled, rolled, cut and filled with mincemeat to produce dumplings. The rest of cilantro is mixed with salt and mint in oxygen-free atmosphere. Resulting dumplings, mix and bone broth in certain proportion are packed into aluminium tubes, pressurised and sterilised.
EFFECT: product of improved digestibility.
