FIELD: food production process.
SUBSTANCE: proposed preserve is prepared as follows: chicken fillet is cut and fried in vegetable oil; shallot onions and chili peppers are cut and sautéed in vegetable oil; garlic and ginger are minced and sautéed in vegetable oil; lemon leaves, green onions, green celeries and bergamot mint leaves are cut and frozen; salted sprat fillet is chopped. The above-mentioned ingredients are mixed with lemon juice and culinary salt under oxygen-free conditions; rice noodles are blanched. The rice noodles, the prepared mixture and meat-and-bone broth are packaged, vacuum-sealed and sterilised.
EFFECT: improved digestibility.
