FIELD: food industry.
SUBSTANCE: recipe components are prepared. Potatoes are cut and blanched. Beetroot and carrots are blanched and cut. Green onions are chopped and frozen. Skin-off salted herring filler and pickled cucumbers are cut. Specified components are mixed without oxygen access with sauerkraut, table salt and calcium sorbate. The resultant mixture and vegetable oil are packaged, vacuum-sealed and sterilised. Digestibility index of the preserve is equal to 12.6·104.
EFFECT: invention provides production of preserved food with higher assimilability compared to similar culinary dish.
