FIELD: agriculture.
SUBSTANCE: present invention can be used for determining long-term, medium-term and short-term storability of fruits. The method is realised through collection of fruit samples and carrying out biochemical analysis. Pre-analysis of degree storability of control lots is carried out through determination of the values of natural loss of mass of control fruits from each control lot in cold storage conditions for a certain period of time, the minimum values of which correspond to long-term storability and maximum values to short-term. Activity of catalase in control fruits is determined in accordance with the first version. Activity of peroxidase in control fruits is determined in accordance with the second version and activity of polyphenol oxidase in the control fruits is determined in accordance with the third version. Activity of catalase, peroxidase and polyphenol oxidase in the control fruits is compared with values of natural loss of mass in the control fruits. Subsequent analysis of the degree of storability of incoming consignments is carried out through determination of activity of catalase, peroxidase or polyphenol oxidase in control fruits of these consignments and using correspondence with pre-analysis. Control lots and incoming consignments are gathered at the same time.
EFFECT: direct and accurate evaluation of storability of fruits.
