FIELD: food industry.
SUBSTANCE: method for forecasting the shelf life of apple fruits means to evaluate the indicators of the technical and biochemical condition of apples measured before laying for storage, with the specified indicators in the control time periods. According to the level of change in the storage process of the values of technical and biochemical parameters, the duration of storage of apple fruits is determined. A decrease in the initial indicators of the hardness of the pulp of apples to 5% and an increase in the sugar-acid index, the intensity of ethylene release by 1.2-1.5 times corresponds to long-term storage. A decrease in the initial indicators of pulp hardness to 20%, an increase in the sugar-acid index and the intensity of ethylene release by 1.6-2.5 times suggests medium-term storage. A decrease in the initial indicators of pulp hardness of more than 30% and an increase in the sugar-acid index, the intensity of ethylene release by 2.6-5.0 times corresponds to short-term storage.
EFFECT: increase in the accuracy of forecasting the shelf life of apple fruits.
