SUBSTANCE: invention is related to food industry, in particular, to pastry products production. Composition includes waffle sheets, which contain wheat flour, melange, vegetable oil, baking soda, dietary salt, lecithin and filling containing confectionary fat, probiotic additive, waffle crumbs, flavor, is aimed at improvement of product quality due to introduction of probiotic additive. Components in composition are taken in appropriate amount. Probiotic additive used may be "Bifilact D" or "Bifilact A". At that assortment of pastry with preventive purpose is provided.
