FIELD: food industry.
SUBSTANCE: according to the method proposed, seaweed raw material is minced till mince is obtained with particles size not more than 3 mm. Laminaria japonica, Laminaria saccharina or rockweed are used as seaweed raw material. Minced seaweed is mixed with sugar syrup in ratio 1:0.5-1.5:0.5 respectively. After that thermal treatment is performed. 5% solution of citric acid is added, fermentolysis of selenium-containing food yeasts is performed till selenium content 400 microgram / 100 g and taste and flavour additives.
EFFECT: proposed method allows to obtain product, enriched with food fibresm vitamins and mineral substances, including selenium.
