FIELD: food industry.
SUBSTANCE: method involves algal raw material preparation, milling till production of mince with particles sized no more than 3 mm, mixing with microelements in an organic form, thermal treatment and packing. Additionally, one introduces cranberries and/or dried apricots in an amount of 50% of the mince weight. The microelement in an organic form is represented by a compound of chrome with milk whey protein hydrolysate or with milk protein hydrolysate with chrome content in the compound equal to 0.1-0.3%. The compound content in the product is equal to no more than 250 mg/100 g. Thermal treatment is performed in a fine milling installation at a temperature of 89-92 °C during 90-120 minutes. The algal raw material is represented by dried Laminaria japonica or Laminaria saccharina. Before milling laminaria is hydrated or, if frozen, defrosted (before milling); alternatively, fucus is used. Additionally, one introduces sucralose in an amount up to 100 mg/100 g of mince and pectin in an amount of 4 g/100 g of mince.
EFFECT: invention allows to expand the range of algae jams having high nutritive and biological value and ensuring their usage in alimentation rations of people suffering from alimentary-dependent deceases.
