FIELD: food industry.
SUBSTANCE: invention relates to canning industry, namely to sterilisation method of compotes in jars. Method provides for jars with cherry plums, mirabelles and cornel compote are put onto the bearer and warmed in three stages in water at 60, 75 and 85°C during respectively 5.5 and 15-20 minutes while cooling in atmospheric air flow at speed 4-5 m/s during 20 minutes. During heat treatment, the jar is turned upside down with frequency of 0.133 s-1.
EFFECT: method provides end products quality improvement, reduced process time and saving of thermal energy and water.
