FIELD: food industry.
SUBSTANCE: invention relates to canning industry namely to sterilisation methods of compotes in jars. Method provides for cherry plums, mirabelles and cornel compote three-staged warming in water at 65, 85 and 100°C during respectively 5, 10 and 5-10 minutes while cooling in atmospheric air flow at speed 5-6 m/s during 20 minutes. During heat treatment, the jar is turned upside down with frequency of 0.166 s-1.
EFFECT: method provides end products quality improvement, reduced process time and saving of thermal energy and water.
