FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry. After pre-processing and packing in jars marrows are filled with hot water of temperature 90°C during 2-3 min, then water is switched with brine of temperature not lower 97°C. Then sealing and sterilisation are performed in autoclave according to the new method including cooling in two stages.
EFFECT: invention allows to decrease sterilisation duration time and save thermal energy and water.
