FIELD: food industry.
SUBSTANCE: method provides for packing the marrows into jars. Marrows packed into jars are poured over with 90°C water for 2-3 min after which the water is replaced with 97°C pickle. The jars are sealed and autoclaved followed by continuing to cool in another autoclave or tank.
EFFECT: invention enables to reduce sterilisation duration and enhance treatment uniformity.
