FIELD: food industry.
SUBSTANCE: method provides for packing the marrows into jars. 90°C water is poured into the jars with marrows for 2-3 min, after which the water is replaced for 97°C pickle. Jars are sealed, sterilised in autoclave with the following continuation of cooling in other autoclave or container.
EFFECT: invention enables to reduce sterilisation duration and enhance treatment uniformity.
