FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry. Pre-processed marrows are packed in jars; the jars are filled with water heated to minimum 90°C and thus maintained during 2-3 minutes. Hereafter the jars are drained, refilled with a pickle heated to at least 97°C, closured and autoclaved under the specified mode.
EFFECT: invention allows to decrease sterilising duration with saving thermal energy, decrease inequality of thermal processing, and increase end products quality.
