FIELD: food industry.
SUBSTANCE: invention is related to canned foods industry and may be used for preserving of marrows. Method provides for preparing and packing the marrows into jars. The jars with marrows are filled with water heated to 90°C and thus maintained for 2-3 minutes. After that the water is replaced for 95-97°C pickle, the jars are sealed and autoclaved.
EFFECT: invention enables to decrease sterilisation duration and enhance treatment uniformity.
