FIELD: food industry.
SUBSTANCE: method provides for boiling the cucumaria muscles at 95-100°C for 30 minutes, removing excessive moisture, cooling and chopping. The chopped pieces of 5-7 mm thick are packed into cans, filling is added, the cans are sealed and sterilised. The filling is prepared by heating vegetable oil at 120°C for 5 minutes, adding 30% tomato paste into the hot oil and browning this mixture while stirring it continuously until tomato grains appear. Then granulated sugar with spices dissolved in water which is 80-90°C is added into the mixture. The above ingredients are mixed for 3-5 minutes. The obtained mixture is cooled to 25-30°C and beaten until a homogeneous tomato oil mixture is formed. 80% acetic acid is added to the obtained mixture.
EFFECT: invention enables to produce canned food for dietary, therapeutic and protective nutrition.
