FIELD: food industry.
SUBSTANCE: flavour exuding formula is a homogeneous one-phase system including the material producing flavour and a fat-containing composition including triglyceride of medium-chain fatty acids and fat or lipid with the melting temperature higher than that of the triglyceride of medium-chain fatty acids. The flavour exuding formula can be heated in order to produce and intensify the flavour out of the flavour exuding formula. The desired flavour is exuded in a controlled manner while heating the formula in the temperature range between 40°C and 80°C and the flavour exuding formula is sprayed at a temperature between 40°C and 80°C. In the second version, all the ingredients of the flavour exuding formula are taken in a certain ratio. The food product contains a flavour exuding formula applied on it. The production method of the food product involves producing the food product and a flavour formula, spraying the flavour exuding formula on the food product surface, cooling the processed food product and packing the food product.
EFFECT: invention enables to improve flavour exuding formulas that are storage-tolerant and providing fast temperature-controlled flavour release.
