FIELD: food industry.
SUBSTANCE: invention is intended for use in food industry to produce coffee substitutes. Method provides for preparation of recipe components, yacon cutting, drying in microwave field at specified parametres of process and frying, frying of barley grain, oat grain and cocoa husk, mixing of specified components with cinnamon and vanillin and cryo-grinding of produced mix in liquid nitrogen. Instant powder is produced. When brewed, drink is produced with taste and flavour that is similar to natural coffee.
EFFECT: invention provides for production of new coffee drink from non-traditional raw materials according to wasteless technology.
