FIELD: food industry.

SUBSTANCE: method envisages generation of a continuous or semicontinuous liquid flow through a column having one or several plates; generation of a liquid plug flow through a channel labyrinth on each plate by way of regulation of flow through the channels due to usage of a regulating valve at the plate outlet; delivery of bubbling gas to each plate bottom level. One provides for contact of the liquids with the bubbling gas in the plug flow, removes volatile substances from the liquids and directs the bubbling gas and the volatile substances into a gas duct inside or outside the column. The plate with a plug flow for plate-type columns contains a channel labyrinth consisting of an assembly of bafflers installed on the plate bottom and one regulating valve on the plate bottom. The plate-type column contains one or several plates with a plug flow. The column is used for oil purification.

EFFECT: invention allows to implement a continuous or semicontinuous method of purification of oils or fats with an equal retention time for most of the molecules in each plate of the column and to improve oil quality.
