FIELD: food industry.
SUBSTANCE: invention is related to granulated chocolate production and may be used in confectionary, bakery, pharmaceutical industries or catering. The chocolate granules have a spherical shape and a diameter from 1 to 4 mm containing vegetable fat (10-25 wt %) and chocolate (the rest). The chocolate granules production method is as follows. Chocolate and vegetable fat melts are produced, mixed and stirred to produce a homogenous mixture which is delivered (in drops) into a liquid unmixable with the mixture produced. The said liquid density is lower than those of the mixture while the liquid temperature is below the mixture consolidation temperature. As a result, spherical granules are produced with a diameter from 1 to 4 mm that are separated from the liquid. The liquid is preferably represented by water.
EFFECT: invention enables a considerable improvement of the end product consumer properties and extension of granulated chocolate products range.
