FIELD: food industry.
SUBSTANCE: invention is related to an aerated product including a solid substance and gas clathrate and to such product production method. The solid substance and gas clathrate, according to the invention concept, is selected from the group consisting of clathrate α-cyclodextrin-gas and its derivative with gas content from approximately 1 cm3/g to approximately 20 cm3/g.
EFFECT: inclusion of a solid substance and gas clathrate in the aerated product composition imparts to the product storage stability without loss of gas or foam formation, increases the volume and height of foam cap in aerated beverages, improves organoleptic characteristics as well as appearance and taste and allows to decrease the size of product packages.
