FIELD: food industry.
SUBSTANCE: invention relates to a composition for thickening containing a composition. The composition is characterised by content of xanthum gum having, per 100 weight parts thereof, 0.5 - 10 weight parts of a metal salt bonded to the xanthum gum powder surface by way of spraying the metal salt solution onto xanthum gum and subsequent fluid-bed drying. The thickening composition is suitable for application in beverages, gravies, sauces, soups, mousses and jellies.
EFFECT: composition promotes rapid viscosity development without lumps formation when added to substances containing water, imparts thickness to food products intended for people having difficulties with chewing and swallowing.
