FIELD: food industry.

SUBSTANCE: invention relates to food industry and may be used for prevention and adjuvant therapy of diseases caused by selenium deficit. The method involves separation of a selenium-containing amino acid component preferably - with selenomethionine) from the vegetal raw material by way of water-fermentative hydrolysis with Protosubtilin and Celloviridin fermentative preparations with subsequent centrifugation or filtration of the hydrolysate and its drying till powdery condition. The raw material is represented by flour of soft spring wheat enriched with selenium. Hydrolysis is performed under periodical stirring conditions.

EFFECT: method implementation allows to produce a complex of indispensable amino acids and selenium, preferably, in the form of organic compounds with high digestibility and low toxicity as well as maximally separate selenium organic compounds from wheat.
