FIELD: food industry.
SUBSTANCE: invention relates to meat industry, in particular, to mince production for preparation of frozen chopped beef products. Biologically active additives in the beef mince are represented by fruit distillates in an amount of 5% of the mince weight. The fruit distillates is represented by a distillate of apples or strawberries or cherries.
EFFECT: invention ensures beef mince water-binding and water-retaining capacity improvement, the ready product yield increase, loss reduction during thermal treatment, improvement of functional-and-technological properties of mince as well as nutritional value enhancement due to macro- and microelements and vitamins contained in the distillate.
