FIELD: food industry.
SUBSTANCE: invention relates to confectionary products having an external shell or coating, to syrups for external coatings formation and to methods for such products coating with syrups to form solid external shells. The method envisages application of coating (of a sugar based syrup or a sugar-free syrup) onto pieces or cores of such confectionary material as chewing gum. Dry substances content in the sugar syrup or sugar-free syrup is increased resulting in water content decrease which allows to accelerate sequential coating layers drying implementation. The syrup solution is maintained under an elevated temperature to prevent dry substances deposition or their crystallisation from the solution using a heating jacket.
EFFECT: invention ensures a fast and an efficient method allowing to manufacture a coated high quality product.
