FIELD: food processing industry.
SUBSTANCE: invention relates to sugar-free foodstuff having edible or chewing core and solid coating. Solid coating is obtained from syrup containing at least 95 % of maltitol and 68-72 % of dry matters. Dry matter contains 0.7-1.5 mass % of polyols with polymerization ratio of DP4+. Said core is selected from group containing chewing gum, confectionary product, chocolate, and nut. Method for product production includes syrup coating on foodstuff core, application of powdery maltitol and dying with air at temperature of 15-45°C and relative humidity of 50 % or less. In method for chewing gum production liquid maltitol is applied at high dry matter content, i.e. more than 65 %.
EFFECT: solid coating of improved quality.
