FIELD: food industry.
SUBSTANCE: invention is related to preservation industry. The method is as follows: one performs preliminary heating of fruits in jars with a 85°C hot water during 2-3 minutes. Then one performs replacing the water with 95°C syrup, sealing the jars using self-exhaustible caps and proceeds with sterilisation without creation of counter-pressure in the apparatus according to the preset mode.
EFFECT: invention usage allows to preserve natural components of raw material used.
