FIELD: food industry.
SUBSTANCE: invention relates to food industry. The proposed sweetening composition includes, in combination, at least one water-soluble or water-dispersible food fibre (chosen from dextrins) in an amount of 20 - 95 wt % of the total weight of the sweetening composition and at least one sweetener (chosen from the group of aspartame, acesulfame, saccharin, cyclamate, stevioside and sucralose) in an amount of 0.01 - 70 wt % of the total weight of the sweetening composition. The weight ratio of food fibres to the sweetener amounts to 30:1 - 5:1. The composition sweetening capacity corresponds to the 1- 70-fold sucrose sweetening capacity. The composition physiological composition amount to 0.5 - 10 kcal/g. The composition has residual moisture content equal to 0.5 - 5% of the total weight of the sweetening composition. Additionally, one proposes a method for food products sweetening.
EFFECT: inventions group allows to produce a sweetener composition with reduced caloric content.
