FIELD: food industry.
SUBSTANCE: invention relates to preservation industry, in particular, to a method for production of pear and quince compote in jars SKO 1-82-500. The method involves preliminary preparation of fruits and their packing into jars, pouring with 85°C water for 2-3 minutes, repeated pouring with 95°C water for 2-3 minutes, water replacement with 95-97°C syrup. The jars are sealed and sterilised in an autoclave according to the new mode.
EFFECT: method ensures the process duration reduction, preservation of biologically active components of the raw materials used, boiled and cracked fruits quantity reduction and decrease of the value of excess pressure in the jar in the process of heat treatment.
