FIELD: food industry.
SUBSTANCE: inventions group relates to the food industry, in particular, to the manufacture of biologically active food additives for iodine deficit prophylactics. The biologically active food additive contains a complex of 5-iodine-6-methyluracil and β-glycyrrhizic acid at their molar ratio equal to 1:2. For the biologically active food additive preparation one uses 6-methyluracil, a iodine water solution and β-glycyrrhizic acid in ethanol at the following ratio of initial components: iodine - 0.050 g; 6-methyluracil - 0.023 g; distilled water - 400 ml; β-glycyrrhizic acid - 0.411 g and ethanol - 20 ml. The biologically active food additive production method envisages 6-methyluracil introduction into the iodine water solution with subsequent stirring during 18-22 hours. The produced solution undergoes crystallisation. One adds 5-iodine-6-methyluracil produced after crystallisation to the β-glycyrrhizic acid solution at a molar ratio of 5-iodine-6-methyluracil to β-glycyrrhizic acid equal to 1:2. Then one performs stirring at a temperature of 40-45°C during 6-8 hours; then the ready product is dried.
EFFECT: invention allows enhancing resistance and preventing the complex sedimentation during the process of storage of iodated food products in a liquid form - milk, milk and cultured milk beverages, mineral waters.
