FIELD: food industry.
SUBSTANCE: invention relates to the food industry filed and may be used for manufacture of food products containing food glaze. According to the invention, shellack-based food glaze contains shellack, linseed oil and alginic acid at the following ratio of glaze components, wt %: linseed oil - 30.0-50.0; alginic acid - 2.0-9.5; shellack - balance. The shellack-based food glaze production composition contains shellack, linseed oil, alginic acid, distilled water and 70-100% ethyl alcohol at the following composition components ratio, wt %: linseed oil - 15.0-20.0; alginic acid - 0.6-5.2; shellack - 15.0-30.0; distilled water - 2.0-30.0; 70-100% ethyl alcohol - balance.
EFFECT: invention is aimed at usage of multi-purpose combination of food additives ensuring stability of the shellack-based composition in the form of food glaze in a medium simulating the stomach contents in combination with variation of the composition disintegration in a medium simulating the small bowel contents in case of usage of food glaze of various shapes and structure for manufacture of various shapes of food products.
