FIELD: food industry.
SUBSTANCE: inventions group relates to food industry, in particular to a method and a device for foamed meat or fish product obtainment. The foamed product is obtained by way of pump stirring of milled meat or fish and bone or cartilage pieces sized 3-20 mm accounting for 0.10 wt % to 25 wt %. The produced mixture is supplied into the dispersive device (30) with a chamber (32) where a cylindrical rotor (34) is positioned, having rows of cavities (40) along the circumference for cavitation creation. Gas is supplied into the dispersive device (30). Treatment in the dispersive device (30) is performed with creation of cavitation and dispersion with supplied gas. Bone or cartilage pieces pass through the chamber (32) to obtain foamed meat or fish product containing bone or cartilage pieces and having density equal to 0.4-0.8 g/ml.
EFFECT: invention ensures stable foam obtainment.
