SUBSTANCE: inventions group relates to meat-processing industry, in particular, to a method and system for meat trimmings processing. Trimmings are supplied in the form of sequence of collected trimmings portions (CTP); each collected trimmings portion (CTP) contains multiple trimmings; one measures the ratio of fat to meat in CTP by means of a separator (20) controlled by a controller (50, 51, 52). CTP is supplied to the chosen station (24); at the chosen station (24) one configures a batch on the basis of data on the ratio of fat to meat. The said batch contains one or more collected trimmings portion(s) and conforms to the preset criterion in terms of fat to meat; measured and/or estimated data including data concerning the ratio of fat to meat required for configuring the said batch at the chosen station (24) are supplied as feedback data to the trimmings source that supplies the collected trimmings portion (CTP); the trimmings source, in response to the said feedback data, releases one or more collected trimmings portion(s) (CTP) with corresponding ratio of fat to meat required for the said batch configuring.
EFFECT: invention ensures a high degree of accuracy of categorisation of fat percentage in trimming products, a high degree of automated treatment of trimmings and the end product quality enhancement.
