FIELD: food industry.
SUBSTANCE: method envisages girasol tubers washing, milling with the help of ST-2 homogeniser into particles sized 1-2 mm, production of water suspensions with water duty equal to 6,3, reagent and thermal treatment at pH 20-3.5 and at a temperature equal to 121-128°C. The thermal treatment time was 30 min. The produced suspensions were subjected to in-depth heterophase cultivation with Candida tropicalis CK-4 yeast with addition of Reader medium mineral components in a sequencing batch mode with a closed water use cycle with the filtrate returned to the nutrient medium preparation stage up to 7 times. The content of raw protein in the prepared ready product remains at ASV level equal to 47-51% with exchange of approximately 10% of the fermenter working volume per hour.
EFFECT: method allows to implement a low-waste energy-saving technology for girasol processing.
