FIELD: food industry.
SUBSTANCE: invention relates to technology of preserved appetisers production. Method envisages preparation of recipe components, chopping and freezing fresh ornamental cabbages and Brussels sprouts, smoked fish fillet cutting with carrots, apples, radishes and parsley. Listed components are mixed with lemon juice, table salt and sodium or potassium citrate. Produced mixture and mayonnaise are packed, sealed and sterilised.
EFFECT: method allows to produce new preserves with usage of non-traditional vegetal raw materials without the change of target product organoleptic properties.
