FIELD: food industry.
SUBSTANCE: invention relates to technology of preserved appetisers production. Method envisages preparation of recipe components, chopping and freezing fresh ornamental cabbages and Brussels sprouts, carrots grating, cutting skinned fish fillet, apples and greens. Listed components are mixed with lemon juice, table salt, CO2-extract of pyrolysis timber and sodium or potassium citrate. Produced mixture and mayonnaise are packed, sealed and sterilised.
EFFECT: method allows to produce new preserves with usage of non-traditional vegetal raw materials without the change of target product organoleptic properties.
