FIELD: food industry.
SUBSTANCE: invention relates to food industry, namely to technology of producing sauces. Fruit sauce production method involves soaking ground pumpkin seed extraction cake in drinking water at a ratio of about 1:5 and maintenance for swelling, it is followed by mixing the pumpkin seed extraction cake, cherry plum puree, quince puree, sugar and salt, produced mixture is then cooked till the content of dry substances is about 22 %, followed by adding dill seeds, cloves, coriander, red hot pepper and black hot pepper, CO2-extract of cherry leaves, product is then packed, sealed and sterilized. Components are taken in certain proportions.
EFFECT: invention usage allows to manufacture a product with improved organoleptic and taste parameters.
