FIELD: food industry.
SUBSTANCE: invention relates to food industry, namely to a method for producing fruit sauce. Ground pumpkin seed extraction cake is added drinking water at a weight ratio of about 1:5 and maintained for swelling. Pumpkin seed extraction cake is mixed with cherry plum puree, quince puree, sugar and salt. Then the produced mixture is cooked till the content of dry substances is about 22 %. It is followed by adding CO2-extract of currant leaves, dill seeds, cloves, coriander, red hot chilli pepper and black hot pepper. Then the mixture is packed, sealed and sterilized.
EFFECT: method enables to reduce the after-taste of pumpkin seeds in the product without changing its adhesion properties.
