FIELD: food industry.

SUBSTANCE: group of inventions relates to food industry. Mixing bird's blood with anticoagulant for production of anticoagulated whole blood. Centrifuging anticoagulated whole blood with light fluid extraction and production of plasmatic liquid. Adding decalcifying agent into plasmatic liquid and performing deposition reaction. Removing precipitate by reaction plasmatic liquid centrifugation. Performing decalcified plasmatic liquid ultrafiltration using ultrafiltration membrane and filtrate collecting. Adding emulsifier to produced plasmatic liquid. Performing nanofiltration with production of plasma concentrate. Drying plasma concentrate for production of poultry plasma protein powder. Anticoagulant used is sodium citrate in amount from 0.1 to 5 wt/wt% of entire blood. Low-ash poultry plasma protein powder has protein content greater than or equal to 70 %, immunoglobulin content greater than or equal to 14 % and ash content is less than or equal to 15 %. Low-ash poultry plasma protein powder is used to produce nutritive composition.

EFFECT: group of inventions provides effective overcoming of bird blood complex deep treatment disadvantages, bird blood source processing, reduces environmental pollution, obtained product has advantages, consisting in high content of protein, good taste, balanced amino acid composition.
