Also described is a method for producing a complex enzyme preparation, having penicillopepsin, leucine aminopeptidase and prolyl-specific endopeptidase activities.

EFFECT: invention provides producing the high-active complex of FP penicillopepsin, leucine aminopeptidase and prolyl-specific endopeptidase for use in processing of vegetable protein-containing raw materials in different fields of the agroindustrial complex, to produce protein hydrolysates of vegetal raw materials without bitterness, with improved organoleptic properties and improved digestibility.
