FIELD: biotechnology.

SUBSTANCE: proposal of Penicillium canescens Pepsi-4 VKM F-4677D filamentous fungus strain, which is a producer of an integrated enzyme preparation comprising of penicillopepsin (acid protease), endo-xylanase and beta-glucanase. The strain is characterized by an increased activity of hemoglobin, xylan and beta-glucan. A method for producing an integrated enzyme preparation is proposed. It includes cultivation of said strain in a suitable medium followed by concentration and drying. A method for quality improvement of bakery products is proposed. It involves flour processing in breadmaking by an integrated enzyme preparation.
