SUBSTANCE: group of inventions relates to biotechnology, as well as food industry and agricultural biotechnology. Disclosed are a Penicillium verruculosum MX-73 strain (BKM F-4813D)-producer of modified endo-1,4-β-xylanase, a method for producing an enzyme preparation with high content of endo-1,4-β-xylanase, an enzyme preparation with high content of endo-1,4-β-xylanases for use in bakery industry as a food additive and use of said enzyme preparation for use in fodder production for monogastric animals and poultry. Method for producing an enzyme preparation of endo-1,4-β-xylanase involves deep cultivation of a Penicillium verruculosum producer strain on a nutrient medium containing KH2PO4, (NH4)2SO4, MgSO4x7H2O, CaCl2x2H2O, yeast extract, myelokariocyte, wheat bran with subsequent separation of culture liquid, ultrafiltration with cut-off limit of 10 kDa and drying.
EFFECT: obtained enzyme preparation can be used in bakery industry as a food additive for improving properties of dough, as well as in fodder production for destruction of non-starch polysaccharides in feedstuffs for monogastric animals and poultry.
