SUBSTANCE: invention relates to microbiology. Described is a method for producing an endo-inulinase and sucrase enzyme preparation by cultivation of recombinant mycelial fungus Penicillium canescens Sopp INUA3 strain.

EFFECT: invention improves sucrase activity, sufficient to reduce the level of saccharose when hydrolysis of girasol tubers, that partially solves the problem of efficient extraction of FOS after enzymatic hydrolysis of inulin, while maintaining endo-inulinase activity of the recombinant strain.
