FIELD: food industry.
SUBSTANCE: at the first stage, the initial press sunflower oil is analyzed. As a hydrating agent, instead of process tap water, demineralized water vapour condensate of 3-5% from the oil weight is used in the form of the aqueous solution of sodium chloride mineral salt, subjected to electrochemical activation in a diaphragm electrolythic cell, to produce an acid anolyte with the pH of 4 and an alkaline catholyte with the pH of 9-10. The hydration activator is represented by citric acid in the form of 0.1% aqueous solution concentration, the hydration is carried out in 2 stages sequentially, first with the acid anolyte with the pH of 4, with the addition of citric acid. Then, with the alkaline catholyte with the pH of 9-10; before separating the phospholipid emulsion, the sedimentation within at least 8 hours, separating the hydrofuse, and drying the oil, if necessary, are carried out. After that, the oil is heated to 60°C, and 2% from the oil weight of wax are added in the pre-molten state. The oil is stirred and cooled to +10°C. In the oil, the wax crystallization process begins. The total crystallization time should be at least 10 hours. After 3-4 hours, the oil is slowly heated to 18-20°C. The final stage of said method is filtration of the prepared oil through a cotton cloth on a filter press at the pressure of 1.0-2.0 atm, depending on the condition of the oil and the filtered cloth. After the filtration, the oil is packed in bottles with the nitrogen protection.
EFFECT: invention allows to improve the quality of oil, to isolate phospholipids, including non-hydratable ones, from it more efficiently, and to reduce the pro-oxidative capacity.
